Since I have Monday’s off from school, I figured today would be a perfect time to share what I eat in a day!
9:04 am: Breakfast: Today I ate a Van’s gluten free and vegan blueberry waffle with a drizzle of Aunt Jemima’s lite pancake syrup. On days when I go to the gym, I like to have a breakfast that is mainly carbs, to give me a little boost of energy for my workout. I also like to keep my fairly small otherwise I tend to feel nauseous at the gym.
10:46 am: Post-Workout Protein: I usually like to drink a protein shake after the gym (see my previous post for my recipe!), but when I run out of bananas, I opt for a Builder’s Protein Clif Bar in the mint chocolate flavor as my source of protein. These bars pack 20 grams of plant-based protein!
1:51 pm: Afternoon Snack: I’m not much a lunch eater. Instead I like to snack throughout the day. For my afternoon snack today I had some Wegman’s Vegetable Hummus spread on Wegman’s Whole Wheat Pop Cakes. These pop cakes are a cross between a wafer and a cracker. They have no taste and are only 20 calories for serving, so they make a great vehicle, if you will, to hold the hummus.
5:36 pm: Dinner: Every Monday for dinner I visit my grandparents, and my grandma makes dinner for herself, my grandpa, my dad, and I. Tonight she made pasta with homemade sauce! She always tells me what she is making in advance, so whenever it’s pasta night I make sure to bring my own meatballs and cheese. I love Gardein’s Meatless Meatballs and Follow you Heart’s Vegan Parmesan Cheese.
After a dinner as filling as that, I’m pretty much stuffed for the night. If I’m feeling adventurous I will have dessert. My favorites are Haagen Daz’s Non-Dairy Chocolate Salted Fudge Truffle Ice Cream, Dole Brand Dole Dippers (dark chocolate covered banana slices), or some fresh fruit!
